I don’t get you guys. I mean, we tell you it’s going to be bad, and it’s all you want to see. Whatever sizzles your bacon.

Once upon a time, there was three little pigs. Until I came into town, and then there were only two. And he was delicious.

I love pigs and not in a household pet kind of way, it’s more like in a big, bad wolf kind of way. So today we answer the all important question of how to cook bacon. Why? Why not??

Who doesn’t love bacon? I mean, even if you don’t like it, there’s a very good chance that like nine out of the ten people that you know… [Snicker] You only know ten people? Nine out of ten people LOVE bacon. And besides, that delicious little strip of porky ought to be cooked correctly. So many of us cook it wrong. I mean, we turn it into soggy, floppy noodles or charcoaled briquettes. You have to cook bacon right. And there’s only one way.

Slow and low is the secret, high heat is your enemy. Load on just enough bacon to coat the bottom of the pan, but don’t let it overlap. And then let it sit and cook for fifteen to twenty minutes on low heat. Flip it halfway through. When you see the bacon start to get little white foamy bubbles on it, it’s ready to pull off and pat dry.

But your bacon is not wet. Patting it dry is just a euphemism for removing all of the fat.

Two little piggies had roast beef. But not me, I had piggy. That makes one left.

So what if you want healthy bacon? You should probably eat something else. Healthy isn’t really an option. So if you want less DEADLY bacon, then set your oven to three hundred and fifty degrees, spread the bacon out on a cooking rack, and set it on a nine by thirteen pan or on a cookie sheet. In about ten to fifteen minutes, you’ll pull out delicious little Wilber strips that are a lot better for you than their pan fried cousins.

But their cousins were delicious too so it’s okay. Cooking it that way actually makes it better for you. And the reason is the same reason why grilled meat is better for you than pan fried. A lot of the fat has a chance to drip off during the cooking process. It just doesn’t sit there in its own grease while it cooks.

The other huge bonus to cooking bacon in an oven or gas grill outside is that you can do a ton of it at once. So let’s switch gears. There are other parts of the pig that are worth eating too. And here’s the trick that works great with thicker cuts of meat like pork chops. Preheat your oven to five hundred degrees and turn your stove top burner on High. Yeah, you’ll need both of them. And salt and pepper. Season both sides of that chunk of Babe and throw it in a hot frying pan with some oil or butter. But if it doesn’t sizzle, then your pan is way too cold. Cook both sides of the meat until it’s browned and looks delicious. Yeah, the inside will still be raw. But then throw it in the oven for six to ten minutes. And that will cook the rest of it.

And this oven trick works for just about everything, from chicken breasts to really thick hamburgers to steaks, you name it. Just adjust the time depending on the thickness of the meat.

You’re probably wondering what happened to the third little piggy… Well, he didn’t cry wee wee wee all the way home. ‘Cause I took him home in a special container. Me.

    OK, here's your bacon episode. The best way to cook bacon is this: 1) Pre-heat oven to 425 degrees F 2) Line a cookie sheet with a layer of foil 3) lay down a single layer of bacon 4) cover bacon with another layer of foil (to stop splatter, no need to seal) 5) bake for 6 minutes 6) turn bacon and pour off any grease 7) bake for 6 minutes (for crisp bacon, longer if you like really crisp bacon) This is the perfect way to cook bacon and you can cook a lot of it at once.     its a pretty simple explanation for why the best tasting food is 'bad' for you. for 99% of the time we have existed as a species, getting enough food was a constant struggle. you couldn't walk down to the supermarket once a week, but actually had to catch or find every meal in the wild. hence, those humans that developed a taste for high fat, high calorie foods had a better chance of avoiding starvation long enough to produce offspring and pass on their fat loving genes. of course we no longer struggle to get food today, and heart disease ... lots more

    I liked the video but the biggest problem people have with cooking bacon is not high heat but rather it's not realizing how much it continues to cook after removing it from the heat. We tend to only remove food from the heat after it appears to be fully cooked but hot bacon, like fish, will cook for an additional 2 to 3 minutes after it's taken off the burner. So crank up the heat and remove the bacon when it's within a few minutes of where you want it done and you'll be enjoying a bacon sarnie in less ... lots more
