Mrs. Camera Guy wrote, “So…where’s my chocolate?” Then Rabble of Redheads wrote, “Yeah…where’s her chocolate?” Then andreacro wrote, “So, where is her chocolate?” And Madalina wrote, “…but… the Chocolate? Where is it?” So what should you know about chocolate, you know, besides the whole insert-into-mouth, chew-and-swallow thing… ’cause you’ve probably already got that down. Well, first of all, not all chocolate is created equal. Hard to believe, I know, but if you go to Belgium and get a healthy helping of what real chocolate’s supposed to taste like and then you pop a Hershey’s Kiss in your mouth, *Pop* you’ll spit it out faster than you can say, “Yeaghch!” Hershey’s kiss of death…well, it’s just not good chocolate. You see, you think it tastes good, but that’s because you’re a cultureless chocobarbarian who’s never had really good chocolate.
So, what makes good chocolate good chocolate? Surprisingly enough, a lack of other things. Most of that buy-a-bar-for-a-buck supermarket chocolate has a wax stabilizer added to it to keep it in solid form. Why? Because real chocolate is fluid at 85 degrees! So real chocolate melts in your hand, and in your other hand, and then in your mouth, and your car, and in your cupboard, and that makes it a little more difficult to transport, and store, and save for later. Save for later? Nobody saves it for later! Well, I don’t save it for later. Unless of course you mean the part that melts to my fingers while I eat it. I save that for later… like 4 seconds later.
Really good dark chocolate should only contain a few things: cocoa mass, cocoa butter, vanilla and lecithin (That’s an emulsifier. It helps hold all that sweet stuff together). In really good chocolate, sugar is not the number one ingredient. That’s because it doesn’t have to be…you see, it tastes good already. Now if you’re really into brown ambrosia, you’ve likely heard of single source chocolate. They get all their beans from one area. Single source is fine, and it can be good chocolate [rubs chocolate box] Good chocolate… But it doesn’t mean that other chocolates from mixed beans aren’t. The real qualifier is the quality of the beans, and that’s usually reflected in the price. Good beans leads to good chocolate leads to good relationship, and interestingly enough, I just read that high quality semi-sweet or dark chocolate is not necessarily as bad for you as some people might think. It’s actually classified like nuts or olives or avocados, things that have healthier fats. You should just eat chocolate in small amounts. This shouldn’t become the staple of your diet, I mean, if you eat chocolate everything, you’ll probably grow up to be a beach ball… that’s insensitive, let’s rewind.
So where does Camera Guy go when he really needs some really good chocolates for Mrs. Camera Guy? Jack Fisher. Jack’s a renowned pastry chef here in San Diego, and according to Camera Guy, it’s some of the best chocolate he’s ever had, and yes, he’s been to Belgium and France, and he’s eaten a lot of chocolate. It’s pretty much required when you’re an American living in Belgium and France to eat a lot of chocolate. It’s like part of their culture; you have to absorb the culture…and all the calories that come with the culture. Where’s that box anyway… Oh! You wanna know where her chocolates are? These are her chocolates! Ah, that looks good! I’m guessing this is the one I’m supposed to eat, right here. She’ll never know they were gone, except that there’ll be a space where it’s supposed to be. You got any Hershey Kisses I can sub in here? [an arm takes the chocolate box] I guess they were hers anyway, oh well. There ya go, she got her chocolates. I’m just gonna lick the top of the box.
Don’t eat it in large quantities. Just a little bit of chocolate. It’s like love… you don’t want tons of it.

I went to chocolate tasting not too long ago and they told me, good quality chocolate can last 3-6 months. How on earth is that possible? My good quality chocolate lasts maybe 2 days. Before I eat it all.Drecon

How timely. My family went to a Chocolate Exhibit yesterday. Many many centuries ago, chocolate was used for barter/trade like money. Of course, I had to buy a Triple Chocolate Brownie Slab and use real money, but it was worth it. Thanks for another delicious show.Heidi
